posted on January 23rd, 2014 by Kevin Rafferty, Jr., Communications Specialist, Disneyland Resort

Chef de Cuisine Bill Orton oversees culinary training, chef recruiting and special dietary programs at the Disneyland Resort, including a new Culinary Apprentice Program he helped develop!

As the first three cast members selected for the program, Chefs Albert Esparza, Joanna Aguayo and Sean Harper are about two months into their six-month journey to become certified culinarians with the American Culinary Federation, learning culinary skills at a different Disneyland Resort dining location every two weeks.

The three chefs will learn how to create everything from pasta with clams at Wine Country Trattoria to fried pickles at Carnation Café, and also will spend a week at an outdoor vending location. Chef Bill explains more about the program and his role in this “Every Role a Starring Role!

Every Role is my favorite feature of the Disney Parks Blog! Thanks for sharing! As someone with enough food related issues that make me the worst dinner guest ever, I appreciate the ease of eating at Disney and the lengths that they go to to accommodate people with dietary issues. Thank you for these segments and for the thoughtfulness that goes into your dining program.

Chef Orton, it’s my favorite also. Love the corn chowder!

We love Storytellers too! I often wish I could get a bowl of that corn chowder in the parks- perfect for a quick lunch, right? And Storytellers bread pudding! So good it makes me want to cry. In a good way :)

And dealing with food allergies is one reason we love eating at Disneyland. All those great chefs make it so easy for us. Thanks, Chef Orton!

My family loves coming to Disney. Both of my parents have life threatening food allergies and thanks to the policy of chefs coming to talk to guests with eating restrictions we feel safe and confident we are being taken care of. I cannot thank Disney and all the chefs enough for giving my family an opportunity to have family vacations.
