Looking for an easy, unusual and quick first course – or lunch in a bowl? Award-winning Chef Suvir Saran shares his “Crunchy Indian Snack” that he grew up eating in India as a child.
Chef Saran will be at the Epcot International Food & Wine Festival Nov. 10 and 11 as part of “Kitchen Memories,” a new series at this year’s festival. He’ll create a delicious three-course lunch and tell stories of his early years in India, his travels around the globe and his beautiful farm in upstate New York. And we just bet this salad will be on the menu. (We found bhel puri in an Indian specialty market and shopping online.)

Crunchy Indian Snack
Serves 3 to 4
1 cup bhel puri mix*
1/2 small red onion, chopped
1 tomato, chopped
1 1/2 tablespoons favorite green chutney
2 tablespoons favorite tamarind chutney
1 small boiled potato, peeled and chopped
Fold all ingredients together in a large bowl and serve immediately.
*Cook’s note: Bhel puri is available in Indian markets or online. A popular snack all over Indian, it’s a spicy, crunchy mix of puffed rice, nuts and dried noodles.

anyone else love the “hidden mickey” made by the bowls?
Oh I really would’ve loved to have seen Chef Suvir. I enjoyed watching him on “Top Chef Masters” this past season. Unfortunately, he’ll be at the Festival after we will be there in October.
