‘Delicious Disney Just for Kids’

The newest cookbook in the “Delicious Disney” series is hot off the presses – featuring 20 easy-to-make favorites from the restaurants at Walt Disney World Resort, Disney Cruise Line and Disneyland Resort. And while we chose recipes that are well, child’s play, we think most grown-ups also will love the ease of recipes for the Big Thunder ribs, BLT Tomato Soup from Sci-Fi Dine-In Theater Restaurant and a chicken Caesar wrap from Disney Cruise Line.

'Delicious Disney Just for Kids' Cookbook

We started with dozens of recipes from the Disney chefs and culled them down to about 30 or so to test and tweak in home kitchens, ending up with the 20 best that showcase a variety of restaurants and tastes.

African Fruit Fool

From “Delicious Disney Just for Kids:”

African Fruit Fool
Boma – Flavors of Africa
Disney’s Animal Kingdom Lodge
Walt Disney World Resort

Serves 6

1 cup diced fresh pineapple
1 green apple, peeled and diced
1 small, ripe mango, peeled and diced (about 1 cup)
1 cup diced fresh papaya
2 cups red seedless grapes
3 bananas, peeled and sliced
1 cup shredded coconut
3/4 cup sweetened condensed milk
1 cup heavy cream, well chilled
1 teaspoon vanilla extract

  1. Combine pineapple, apple, mango, papaya, grapes, bananas, and coconut in a large bowl. Gently stir to combine. Stir in sweetened condensed milk.
  2. Whip cream until soft peaks form. Add vanilla and continue to beat just until stiff peaks form. Working in batches, gently fold whipped cream into fruit mixture.
  3. Cover bowl with plastic wrap. Refrigerate until cold, approximately 30 minutes.

  • Pat, it would be way less delicious with skim milk. Amazingly enough fat makes things taste delicious.

  • I attempted to order this cookbook by phone and the cast member said they do not have any books with this title. When I suggested phoning in later in the week she said they would not have it then either because there is not a book with that name (I read it to her directly from the blog and said as much). Perhaps it will be available online soon?

  • Looks wonderful with all the fruit! Would not be the same with skim milk and lite cream. Everything in moderation!

  • Bummer. Just tried to order the book and was told it’s not in stock yet and is scheduled to arrive between now and June.

  • All those fresh fruits make the recipe look wonderful. It is also fairly healthy, especially compared to some other options.

    After I have tried it as written, I may make changes like using low-fat sweetened condensed milk.

  • I would think that this would be quite fattening considering you used condensed milk and heavy cream.
    Why not make it more healthy by using skim milk and lite cream?
