Carnation Café Closes Thursday for Renovations at Disneyland Park

A Disneyland park favorite will close its doors this week – but only until summer, when Carnation Café will re-open with more seating (adding the indoor seating that disappeared in the 1990s) and a spruced-up menu.

And no worries – if you’re looking for cast member favorite Oscar Martinez, you’ll find him over at the Jolly Holiday Bakery Café opening this month, but only until Carnation Café re-opens. Then you’ll find Oscar back at Carnation Café.

When Carnation Café re-opens, look for breakfast, lunch and dinner favorites, along with new dishes and some Walt Disney favorites.

So, ‘til the doors open this summer, here’s the recipe for the decadent Loaded Baked Potato Soup just in case you have a hankering.

Loaded Baked Potato Soup from Carnation Café at Disneyland Park

Loaded Baked Potato Soup

Serves 6

1 pound bacon, roughly chopped
1 medium yellow onion, diced
1 large carrot, peeled and diced
3/4 cup diced celery
4 large Russet potatoes, peeled and diced
4 medium red potatoes, diced
1/4 cup flour
2 cups chicken or vegetable stock
Coarse salt, freshly ground pepper, to taste
4 cups heavy whipping cream
Optional garnishes: chopped chives, bacon bits, sour cream, shredded cheddar and Monterey Jack cheese

  1. In a 6- to 8-quart stockpot over medium heat, fry bacon until crisp.
  2. Remove bacon and drain on paper towels, reserving half for garnish. In bacon fat, cook onions, carrots, and celery until the onions are translucent. Add potatoes and cook for 4 minutes, stirring occasionally.
  3. Whisk in flour and stir constantly over low heat until the flour is cooked and the mixture has thickened slightly, about 5 to 7 minutes. Add chicken stock and half of the bacon. Season with salt and pepper.
  4. Over medium-high heat, bring the soup to a simmer and cook for 25 minutes or until the potatoes are soft. Mash some of the potatoes for thicker, creamier texture. Add whipping cream and simmer for 5 minutes.
  5. Adjust thickness by adding water or stock. Soup should have a creamy consistency.
  6. Season to taste, and garnish with toppings.

Cooks’ notes: Soak diced potatoes in cold water until ready to use to keep them from turning brown. To make bacon easier to chop, lightly freeze.

  • Ok, so I’m sort of piecing this together in my head here..I’m assuming the indoor portion of Carnation Cafe will now be in the Blue Ribbon Bakery? So, that’s closed too? I’m assuming the Jolly Holiday Bakery Cafe is replacing the Blue Ribbon Bakery, so it has the same menu?

    I am SO excited about having this soup recipe, however, I just started Weight Watchers on the 1st, so any chance we could get the nutrition facts on that bad boy so I can see how many points it is?

  • I ate there New Yrs eve for lunch and had the meatloaf stack. I think it would be cool if they added the loaded bake potato soup in a bread bowl some place while the carnation cafe is closed.
    Its always such a pleasure and joy to get to see Oscar. And even when I am not eating there, when I pass on by and see him, he smiles and says hi or I do. And I had the pleasure the last time to get a picture with him.

    I read your review of Remi on the Disney Dream. We will be doing Remi on Sunday Jan 22 out of Port Everglades. My husband hates dressing up. Would a dark navy sport jacket, white dress shirt and beige dressy khakis (not jean style) be allowed? also, we enjoy dining out but have never been to such a high end experience. We plan to do the wine pairing but will we feel intimidated by the waiters and the entire experience?

    • I think a navy sport jacket with a dress shirt and khakis would be fine. Remy is a memorable evening, ask your waiter any questions and be immmersed in the experience of a true French dinner.

  • This is awesome, thank you! I am soooo bummed that the Carnation Cafe is closing down for any amount of time, although I know it will be bigger and better when it finally does. I was there for lunch yesterday (didn’t get the soup, but now I can make it!), and will be going for breakfast today to get my Oscar’s choice. Can’t wait! By the way, is it true that the menu will be changing? Any insight into that?

    • Chefs are working on the menu now — not sure about vegan options, as another reader asked, but stay tuned!
